2-3 Tbsp olive oil
1/2 pkg chopped onion and bell peppers
1 can whole corn, rinsed
1 can black beans, rinsed
1/4 cup apple cider vinegar
1/4 cup basil
1 tsp lemon juice
sea salt and ground pepper to taste
spinach tortillas
In large skillet over high heat, add onion and bell pepper to olive oil.
Add mango, black beans, corn, apple cider vinegar, basil, and lemon juice.
Cook 10 min til tender, season to taste, and serve in warm tortillas.
