1 onion, chopped
3 Tbsp olive oil
1 cup black beans, rinsed & drained
1 cup quinoa, cooked
1 pkg instant brown rice
Sea salt & ground pepper to taste
In large skillet, cook onion and sausage in olive oil on high.
Add black beans and quinoa. Cover with lid for 10 min.
Boil instant brown rice in water in med pan for 10 min.
Add cooked brown rice. Season to taste.
