2 Tbsp olive oil
1 Tbsp minced garlic
1/2 pkg frozen chopped onion with peppers
6 sweet peppers, chopped
1 pkg instant brown rice
1 pkg frozen vegetable gumbo mix ( okra, corn, red peppers,& onion)
In large skillet on high, cook garlic, onions and peppers in olive oil.
Add sweet peppers and vegetable gumbo mix. Stir in vegan beef-tips and cover.
Cook instant brown rice according to package directions on high for 10 minutes.
Then open rice package and add to skillet to beef tips with vegetables. Serve & enjoy!
