2 ears fresh corn, cut off cob
1-2 stalks of fresh celery, sliced thin
3 fresh tomatoes, cut up into bite-size pieces
1 pkg frozen chopped onion with bell peppers
1 pkg frozen Mexican vegetables (broccoli, corn, cauliflower, red peppers)
2-3 Tbsp olive oil
1 tsp fresh basil
1 tsp Bragg’s Liquid Aminos (vegan soy sauce)
sea salt and ground pepper to taste
In a large skillet with olive oil, cook onions and bell peppers, tomatoes, corn, on high for about 10 minutes.
Before serving, add basil, sea salt and ground pepper to taste, and pkg of mandarin oranges for flavor.
