1 onion, chopped
1 Tbsp garlic, minced
1 cup celery, sliced to 1/4″
1 can black beans, rinsed and drained
2 vegan sausages (Tofurky Italian Sausage with Sun-dried tomatoes and basil) sliced
1 pkg. instant brown rice, optional
In large skillet on high heat, cook onion, celery, and garlic in olive oil.
Add vegan sausage and black beans and heat for about 10 min.
For optional servings, cook rice according to package directions
in boiling water for 10 minutes. then open bag and add to skillet mixture.
