1 pkg Jiffy Cornbread mix
1/3 cup almond milk
1/3 cup unsweetened applesauce
Olive oil spray
Spray mini 24 cupcake pan with olive oil.
Preheat oven to 350 degrees.
Stir milk and applesauce into cornbread mix in a bowl.
Mix well and spoon mixture into mini cupcake pan by teaspoonful
Bake for 10 minutes. Use spoon to lift muffins out of pan while warm
.
These vegan cornbread muffins are quick and easy.
They go great with a variety of dishes and
are my daughter and granddaughter’s favorite!
