2 Tbsp olive oil
1 onion, chopped
2 pkg. instant brown rice

Vegan Beef Tips / Green Bean Casserole
Boil 4-6 cups water, add 2 pkg. rice, turn off heat and steam for 10 min.
In large skillet, cook chopped onion till clear on high about 5 min.
Add beef tips and steam about 5 more min. Serve over steamed rice.
This is one of my favorite recipes! The vegan beef tips are super tender and full of flavor.
2 cans green beans,drained and rinsed
1/2 cup cashews
1 onion, chopped
1 can fried onion rings
Boil 2-4 cups water, add cashews. Cook 10 min till tender.
Remove from heat and blend on high in blender till thick. (Caution Hot!)
In large skillet, cook chopped onion till clear on high about 5 min.
Add green beans and steam about 5 more min.
Mix green beans and cashew sauce in ovenproof bowl.
Stir in 1/2 pkg fried onion rings. Top with 1/2 pkg fried onion rings.
Bake in oven 30 min at 350 degrees.
The cashew sauce in the green bean casserole is delicious! It can be used to replace your
cream of mushroom soups in many recipes!!
