1/2 cup baby carrots, cut into 1/2″ pieces
1/2 cup broccoli, 1″ pieces
1/2 cup zucchini, sliced and quartered
1/2 cup celery, sliced to 1/4″
1/2 cup Bella mushrooms, sliced to 1/4″
1 cup canned sweet peas
2 Tbsp olive oil
1 tsp minced garlic
1/2 cup sun-dried tomatoes, sliced to 1/4″ strips
In a large skillet over high heat, saute mushrooms in olive oil and garlic. Add grilled chicken strips and all vegetables. Cover to steam for 5-7 minutes until tender. Serve and enjoy!
