1 can whole corn, rinsed & drained
3 green bell peppers, chopped
6 sweet peppers, chopped ( 2-red, 2-yellow, 2-orange)
2 cucumbers. sliced & quartered
2 Roma tomatoes, sliced and quartered
1 medium red onion, sliced & chopped
1 cup Balsamic vinegar
sea salt & ground black pepper to taste
In microwave safe container, cook corn and black beans separately for 1-2 minutes each.
In large mixing bowl, add all prepared veggies, in addition to black beans and corn. Season to taste.
Stir in Balsamic vinegar, stir and refrigerate overnight to allow veggies to marinate well.
I love this Cold Veggie Salad because it tastes like salsa and it’s soooo good to eat!
