1 cup fresh broccoli, broken into 2″ pieces
1 cup fresh cauliflower, broken into 1″ pieces
1/2 cup fresh zucchini, sliced and cut into 1″ pieces
1/2 cup fresh celery, sliced to 1/4″
1/2 cup cherry tomatoes
1 cup canned pineapple chunks
1 onion, chopped into 1/2″ pieces
1 can black beans, drained and rinsed
2 meatless sausages, sliced to 1/4″ and halved
2 Tbsp olive oil
In serving bowls, divide spinach and fresh vegetables evenly. Top with canned pineapple. Set aside.
In large skillet over high heat, saute onion, black beans, and sausage in olive oil until heated through and tender.
Spoon cooked beans,onion, and sausage over fresh salad. Serve and enjoy!!!! Delicious!!!
