2 cups unsweetened shredded coconut (1 package)
6 Tbsp coconut oil
6 Tbsp Maple Syrup
1 tsp vanilla
3 cups dark cacao chips (Enjoy Life)
In large bowl, combine coconut, coconut oil, maple syrup, and vanilla in a food processor or blender until well blended.
Using a spoon, measure out enough mixture to shape out 1″ balls with hands and place on parchment or waxed paper.
Meanwhile, melt cacao chips in microwave-safe bowl. Spoon melted chocolate over coconut balls to cover sides. Refrigerate or
place in freezer to allow chocolate to harden and enjoy! Makes about 2 dozen, depending on size.
This delicious dessert of Chocolate Coconut Balls is so easy to prepare that my 3 & 4 year old grand-daughters made this recipe. What fun we had creating a hands-on dessert to share with our family! Try it, you will like it!
