1/2 cup pecans, chopped
1/3 cup maple syrup
1/3 cup brown sugar (or molasses)
1/3 cup vegan butter, melted
4 Tbsp cornstarch
4 Tbsp cold water
In microwave safe bowl, mix all ingredients until well blended. Cook for 6 minutes in microwave, stirring after 3 minutes. Mixture should be thick. Spread pecan mixture in center of 3″round pie crusts with edges folded up to keep pecan mixture inside. Bake in 350 oven on flat pan lined with parchment paper 12-15 minutes until pie crust is done. Homemade pie crust recipe made about 10 tarts.
