3 (1/2 cup) individual servings of natural applesauce
1 cup agave
1 cup olive oil
1 tsp vanilla
2 1/2 cups whole wheat flour
1/2 tsp sea salt
2 tsp baking powder
3 tsp cinnamon
First, mix grated zucchini with applesauce, agave, oil and vanilla.
Next stir in whole wheat flour, sea salt, baking powder, and cinnamon.
Then, pour into large loaf pan and bake for 30 min at 350 or until toothpick comes out clean.
This is my favorite recipe I have used since my children were young. Vegan zucchini bread
can become another family favorite, banana bread, by substituting 2 mashed bananas for zucchini.
