1/2 bunch green onions, chopped to 1/4″
2 Roma tomatoes, sliced and chopped to 1/2″
1 cup Bella mushrooms, sliced
1 tsp chili powder
sea salt and ground black pepper to taste
2-3 tsp olive oil
1 cup jasmine rice, cooked according to package directions
salsa as optional topping
In a large skillet over high heat, saute mushroom slices in olive oil. Add green onions and tomatoes, black beans and seasonings. Simmer while rice is cooking and stir in rice before serving. Salsa makes a great topping to be added separately by the consumer. Enjoy!
Black Bean Rice Bowl is one of my favorite dishes to order at several my favorite restaurants, so I decided to try making it at home. This will become a regular at my house now!! Too easy not to try!
