1 crown broccoli, cut into 1″ pieces
1 small zucchini, sliced into 1/2″ pieces
1 onion, cut into 1/2″ pieces
2-3 Tbsp olive oil
1 can black beans, rinsed
1 can chickpeas, rinsed
1 can chopped tomatoes
1/2 pkg meatless ground
In a large skillet over high heat, saute onions and meatless ground in olive oil. Add broccoli, zucchini, black beans, chickpeas, and tomatoes. Reduce heat and cover for 5-7 minutes until vegetables are tender. Warm tortillas in microwave for 30 seconds and fill with Broccoli Stir-Fry from skillet. Serve and enjoy! I served rice and refried beans as a side.
