1 cup almond milk
1 cup grated non-dairy cheddar cheese
2 oz non-dairy cream cheese
1 1/2 tsp Dijon Mustard
1/2 tsp garlic powder
Sea salt and ground pepper to taste
Olive oil spray
In large stock pot, boil cut up cauliflower for 10 minutes until tender. Drain.
In small saucepan, heat almond milk, cream cheese, 1/2 cup cheddar cheese and seasonings. Wisk until smooth.
In oven proof bowl, spray oil and add cauliflower and pour sauce over and top with remaining 1/2 cup cheese. Bake in 375 oven for 10 minutes.
