1 can diced and peeled tomatoes
2-3 Tbsp olive oil
1 onion, chopped
1 piece ginger, grated
1/4 cup basil
1/2 tsp red pepper
1/2 tsp turmeric
1/2 tsp curry
1/2 tsp cloves
1/2 tsp mustard
sea salt and fresh black pepper to taste
In large skillet over medium heat, saute onions in oil and add spices for about 5 minutes. Add chickpeas and tomatoes. Cover and simmer about 10 minutes.
I love this spicy Chickpea Tikka as an entree or even a side for my Mediterranean cooking!
