1 pint hummus, flavor of choice
2 Roma tomatoes sliced
1 avocado, peeled and cut into small pieces
1 onion chopped
6-8 sweet peppers sliced and deseeded
1/2 cup broccoli, cut into small pieces
1/2 zucchini sliced and cut into small pieces
Cook pasta according to package directions in large pot of boiling water for 10 minutes till tender. Rinse and drain.
Add fresh cut up vegetables and stir in hummus. Refrigerate and serve.
I made this delicious Cold Vegetable Pasta for Thanksgiving because it gave me an alternative of healthy vegetables to enjoy!
