4 skewers of vegetables (cherry tomatoes, purple onion 2″ slices,yellow squash 1/2″ slices, green zucchini 1/2″ slices,red & green bell pepper 2″ pieces), removed from skewers
1 cup raw broccoli florets, 1″ pieces
1 cup raw cauliflower florets,1″ pieces
1 cup sliced baby bella mushrooms
1 cup baby carrots, sliced to 1/2″
1 tsp curry
1 tsp turmeric
1 tsp cumin
1 sprig rosemary leaves, removed from stem
sea salt and ground black pepper to taste
In a large skillet over high heat, saute all vegetables and seasonings in olive oil and cover with lid for about 10 minutes until tender but not overcooked. Serve.
