2 cups water
3 cups kale, stems trimmed
2 Tbsp minced garlic
2-3 Tbsp extra virgin olive oil
1 small pkg pine nuts
In medium pot, boil rinsed quinoa for 10 minutes until tender.
In large skillet, heat pine nuts for about 5 minutes. Remove from heat and set aside.
In large skillet, add minced garlic to olive oil and add kale to wilt. Stir frequently. Add quinoa and pine nuts.
Simmer for about 5 minutes. Serve and enjoy.
My husband and I loved this recipe and love the fact that Kale and Quinoa are both superfoods! The flavor and texture are pleasing and we will definitely serve this entree again! What a great combination of nutrition!
