1 cup baby spinach
1 avocado, peeled & seeded
1 pkg non-dairy sour cream
1/2 pkg frozen meatless ground
1 onion, chopped
2-3 Tbsp olive oil
Sea salt & ground black pepper, to taste
Place desired number of tostadas on flat pan in 350 oven for 5 minutes to warm.
In large skillet over high heat, saute onion in olive oil and add frozen meatless ground until heated through about 5-10 minutes. Remove from heat and place over baby spinach on warm tostada. Season with sea salt and ground black pepper to taste. Mix sour cream and mashed avocado until smooth. Top tostadas with avocado mixture.
