Maple Sauce:
1/2 cup coconut cream
1/4 cup pure maple syrup
1 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp ground cloves
pinch salt
In a large pot over the stove, boil sweet potatoes until tender to fork. Drain.
Peel off peeling, slice into 1″ slices, and cut slices into quarters of 1″ chunks.
Mix together Maple Sauce ingredients, heat in microwave about 1-2 minutes
and pour over sweet potato chunks. Stir sweet potatoes to saturate well.
