1/3 pkg frozen meatless ground
1 cup baby spinach
1/2 pkg frozen sliced onions & bell peppers
2-3 Tbsp Extra Virgin Olive oil
1/4 cup shredded vegan cheddar cheese
Sea salt and Ground black pepper
In a large skillet on high heat, add olive oil and sliced onions and bell peppers. Add meatless ground and cook until tender and sizzling.
Warm burritos in microwave for about 30 seconds. Sprinkle vegan cheddar on warm burritos. Layer with baby spinach and top with meatless mixture.
Season to taste with sea salt and ground black pepper. Burritos can be rolled, folded in half, or served open; however you prefer. Recipe can be duplicated to serve a crowd.
I love Mexican dishes and trying out new combinations. These Meatless Ground Burritos were very filling and were served with Avocado-Tomato Tostadas. Very yummy and our family loved them too!
