1 yellow, red, orange bell pepper, cored & sliced thin
2 carrots, capped & sliced
2 zucchini, capped & sliced
1 crown broccoli, cut into 1″ pieces
1 pkg sliced mushrooms
sea salt & ground black pepper to taste
In large flat pan covered with aluminum foil, add all vegetables and spray with olive oil. Season with sea salt and ground black pepper to taste. Bake in 350 oven for 30-45 minutes until tender.
When our family gets together for dinner we enjoy More Roasted Vegetables! If we happen to have leftovers, they make great veggie wraps or even veggie pizza toppings! Healthy eating should be fun, easy, & economical!
