1 can red beans, drained and rinsed
1 pkg Tofurkey Italian Sausage with Sun-Dried Tomatoes and Basil
1/2 pkg frozen onions with bell peppers
2-3 Tbsp olive oil
Sea salt & fresh ground black pepper, to taste
Rinse quinoa with water in fine strainer. Cook quinoa for 20 minutes in 2 cups boiling water.
In large skillet on high heat, saute onion and red peppers in olive oil. Add Italian sausage and red beans.
After quinoa is done, strain off water and add to Red Beans and Sausage mixture. Season with sea salt
and fresh ground black pepper to taste.
