1 can red beans, rinsed and drained
1/4 jar roasted red peppers, cut into 1/2″ pieces
1/2 pkg frozen chopped onion with bell peppers
1/2 tsp cumin
1/2 tsp turmeric
1/2 tsp garlic powder
sea salt and ground black pepper to taste
2-3 Tbsp olive oil
In large skillet over high heat, saute onion and roasted red peppers in olive oil with seasonings.
Add red beans and cover until rice has cooked tender for 10 minutes. Add rice, stir, and serve.
