1 cup meatless ground
1/2 cup onion, chopped to 1/2″
1/2 cup scallions, chopped to 1/4″
1 Tbsp minced garlic
2 Tbsp olive oil
1 can black beans, drained and rinsed
1/2 cup chopped tomatoes
1/2 cup peach salsa
1 tsp chili powder
sea salt and ground black pepper to taste
1/2 cup mild salsa, as topping
In a small saucepan over high heat, add package of brown rice to boiling water for 10 minutes, then drain water and set aside rice package. While rice is boiling, saute onion and meatless ground in olive oil and minced garlic in a large skillet over high heat. Stir in black beans, chopped tomatoes, seasonings, and peach salsa. Cover skillet and reduce heat until ready to serve over rice. Top with spoonfuls of mild salsa.
