1 onion, chopped to 1/2″
1 can black beans, drained and rinsed
2 vegan sausage links, sliced to 1/4″
2 Tbsp olive oil
1 tsp minced garlic
In a large skillet over high heat, saute chopped onion, black beans, and sliced sausage in olive oil and minced garlic. Stir in quinoa and kale (that has been pre-cooked in microwave for 5 minutes). Reduce heat and cover until ready to serve! Delicious!!
