4 cups chopped vegan turkey or tofurkey
3/4 cup Veganaisse
1/4 cup cranberry sauce
2 cups mashed or chopped potatoes
1 1/2 cups shredded mozzarella cheese
Olive oil cooking spray/ or aluminum foil
Preheat oven to 350 degrees. Spray baking dish or line with aluminum foil.
Layer 2 cups stuffing, then the turkey.
Mix Veganaisse and cranberry sauce and spread over turkey.
Next. mix potatoes, remaining stuffing,and cheese and spread over cranberry layer.
Place in oven and bake 40 minutes.
I made this leftover Thanksgiving Turkey Casserole and enjoyed it with leftover yeast rolls!
