1 large onion, chopped
3 Tbsp garlic, minced
1 package potatoes, peeled and cubed
2 8 oz packages vegetable stock
3 Tbsp vegan butter (Earth Balance)
Sea salt and ground pepper to taste
1 cup vegan cheddar cheese, shredded (Daiya)
In a large stockpot over high heat, add vegetable stock, onion, garlic and potatoes.
Cook 30-45 min till potatoes are tender. Add salt and pepper to taste, vegan butter and cheese.
Turn heat to low and let simmer until ready to serve.
