1/2 cup diced onion
1/4 cup diced scallions
1/2 cup red, yellow, orange bell peppers, sliced to 1/2″
1 tsp minced garlic
1-2 Tbsp olive oil
1/4 cup celery, cut to 1/4″
1/2 cup cauliflower, cut into 1″ pieces
1/2 cup broccoli, cut into 1″ pieces
1 pkg vegetable enchiladas
1 jar Mild Salsa, optional
In a large skillet over high heat, saute garlic, onion, scallions, Seitan, bell peppers, celery, cauliflower, and broccoli in olive oil for 5-7 minutes until tender.
Spoon into warmed enchiladas and serve! Delicious with salsa too!
