1 pkg frozen chopped onion with bell peppers
1 pkg frozen mirepoix ( chopped onion, celery, & carrots)
1 tsp cumin
1 tsp sea salt 1 tsp ground black pepper
3 tsp minced garlic
2 Tbsp oregano
1 can Rotel tomatoes
3 cans diced peeled petite tomatoes
2 cans black beans, rinsed
1 can red beans, rinsed
1 can whole corn, rinsed
In large stock pot with olive oil on high heat, add frozen onion and mirepoix.
Add seasonings, tomatoes, beans, and corn. Bring to a boil, then reduce
to low and simmer 45 minutes.
This is a delicious thick Vegetarian Soup so much that I call it my Man Soup
because my husband loves it and he does not usually prefer to eat soup.
