1 pkg stir-fry vegetables(carrots, broccoli)
1 onion, chopped
1 pkg Cremini mushrooms
1 Tbsp minced garlic
Sea salt and ground black pepper
2-3 Tbsp olive oil
In large pot, boil 2 cups water and add 1 cup quinoa (rinsed with fine strainer) for 10 minutes until tender.
Meanwhile, in large skillet over high heat, add garlic and Cremini mushrooms into olive oil for 5 minutes until tender. Add stir-fry vegetables, cover with lid and reduce heat to medium for 5 minutes. After quinoa is tender, drain and add to skillet and season with sea salt and ground black pepper to taste. Enjoy.
