1/2 cup cauliflower
1/2 cup sliced yellow squash
1/2 cup sliced zucchini
1/3 cup yellow bell pepper, cut into 1″ pieces
1/3 cup red bell pepper, cut into 1″ pieces
1/3 cup orange bell pepper, cut into 1″ pieces
1/4 cup sliced mushrooms
1 cup broccoli, cut into 1″ pieces
2-3 Tbsp olive oil
In a large skillet over high heat, saute onion and mushrooms in olive oil and add remaining vegetables. Cover for 5-7 minutes to steam until tender. Remove from heat and serve with warm tortillas. Vegetables can make 4-6 servings.
