2-3 Tbsp olive oil
1/2 pkg frozen chopped celery, carrots, and onion
1 cup fresh broccoli crown,cut to 1″ pieces
1/2 cup cauliflower, cut to 1″ pieces
1/4 cup fresh cilantro, torn into small pieces
sea salt and ground black pepper to taste
1 tsp lemon juice
In a large skillet over high heat, saute celery, carrots, and onion in olive oil. Stir in frozen vegetables, fresh vegetables and seasonings. Cover and reduce heat until tender. Serve and enjoy!
